The Collins Street

What do you get when you take a Tom Collins and give it a twist of Melbourne?

Ingredients:
  1. 60ml MGC Melbourne Dry Gin
  2. 10ml Manzanilla Sherry (dry Spanish sherry)
  3. 30ml Grapefruit sherbet*
  4. Soda
  5. Maraschino cherry
  6. Thai basil
  7. A sprig of rosemary
  8. *To Make the Grapefruit Sherbet...2:1 grapefruit juice to sugar
Method:
  • Build over cubes of ice in a tall glass and garnish with maraschine cherry, thai basil and a sprig of rosemary.
